Instructions:
Preheat the oven to 400°F.
Rub potatoes with canola oil and pierce with a fork. Bake for 1 hour. Cool and split in half, lengthwise. Score flesh with a knife.
Place chickpeas on a baking sheet. Add sesame oil and toss. Sprinkle with garlic powder, ¼ teaspoon salt and ginger and mix. Bake for 30 minutes, stirring every 10 minutes.
Mix ginger, tahini, garlic and vinegar in a bowl. Add 3 tablespoons hot water and stir until smooth. Mix Sriracha and 2 teaspoons water in a bowl. Add 2 teaspoons tahini mixture over each potato half and top with ¼ teaspoon salt.
Top with chickpea mixture, remaining tahini mixture, Sriracha mixture, green onions and sesame seeds and serve.
